Holiday Cooking....

 I am so excited about this recipe book...... my goal is to have 200 recipes (with pictures and all) by summer......SO....... If you have any fabulous recipes that you want to share.... send 'em my way (alieis8@yahoo.com).

Also Josh's Dad surprised us with a NEW WHEAT GRINDER!!!! There will be some serious baking going on at our house.  I can't wait! Cheers!

Pineapple Cheesecake Bars

CRUST..........

3 c. flour

1 1/2 c. sugar

1 1/2 cups (3 sticks) butter

mix and 

press into large cookie sheet. Spray with non-stick spray

bake 350 15-20 minutes. 

combine

16 oz. cream cheese, 2 sticks (softened)

2 eggs

4 T sugar

4 T. milk

2 t. almond extract

2 t. vanilla extract

beat until soft, and then  stir in 

1-large can crushed pineapple with juices.

Pour mixture over lightly browned crust 

combine-

2 cups coconut and 2 T. melted butter

Sprinkle coconut on top and bake at 350 15-20 minutes until coconut begins to brown! enjoy!!!
